Complete spheres on a single sheet! These aren’t half-sphere cavities: at 4.2 cm wide and 4 cm deep they form almost a full sphere with a small opening at the top. There’s no need to join and glue two halves – the dessert comes out in one piece, with no seam.
The filling goes in through the top opening, which stays visible on the finished piece as a small flat circle – use it as the base, or as the spot for your decoration.
The smooth interior gives a glossy, flawless surface, which is essential for mirror glaze and velvet spray.
Holes at the corners let you sit the sheet securely on a perforated baking tray, so it won’t shift while you work.
