Openwork leaf decorations in two techniques – as flexible sugar lace or as crisp tuile. The shallow cavities form a delicate mosaic leaf skeleton, so the finished piece looks lacy and fragile while still lifting out cleanly in one piece.

For sugar lace: spread prepared cake lace mix into the mat with a spatula, scrape off the excess, then dry at room temperature or in a low oven. The finished lace stays flexible, so it drapes over the curve of a cake without cracking.

For tuile: spread tuile or dentelle batter (almond, starch- or sugar-based) into the cavities and bake until done. The result is a crisp, glass-like leaf that can still be curved while hot.

Fixing holes at the corners let you secure the mat to a perforated baking tray, so it won’t shift while baking or drying, and airflow from below gives an even result.
