Mirror glazes and Transparent Jelly

Transparent jelly is recommended when putting wafer paper on your cake. A thin layer of transparent jelly is used underneath and over the wafer paper to protect it from drying out.

It is also recommended to brush the surface of the fruit to give it a shiny coat and to avoid the fruit from losing its freshness when putting them as decoration on cakes.

Mirror glazes are used to make mirror-glazed cakes, especially mousse cakes.
