Ceramic baking beans for blind baking — baking a pastry case before, or instead of, adding the filling. You need this when the filling cooks faster than the pastry, or when it isn't baked at all, as with fresh fruit tarts and cream pies. The weight of the beans stops the base from puffing up and the sides from slumping.
How to use: line the tin with your pastry, lay a sheet of baking paper over it, pour the beans on top and bake the case. Always use them with baking paper so they don't stick to the dough.
Reusable — let them cool, store them, and use them again next time.
